S’mores Popovers

Similar in taste to French toast, the popover is a light, puffy delicacy. An eggy batter is transformed into these sky-high treats, popular in many countries. However, making it with s’mores ingredients takes it to an all-new level!
Yields: 6 large or 12 mini popovers 


  • 3 tablespoons butter
  • 3 eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 6 tablespoons sugar
  • 2⁄3 cup all-purpose flour
  • 13 cup graham cracker crumbs
  • Pinch salt
  • 12 cup dark chocolate chips
  • Mini marshmallows, to top
  • Homemade Chocolate Syrup, to serve as desired
  • Whipped cream, to serve as desired

  1. Preheat the oven to 375°F. Divide the butter into the cups of the popover pan. Place the pan in the oven for 3–5 minutes while you are making the batter. 
  2. In a medium bowl, beat the eggs with the milk, vanilla, and sugar, then whisk in the flour, crumbs, and salt. Pour the batter into the butter-filled cups, then evenly add a few chocolate chips to each cup. 
  3. Place the pan in the oven for 5 minutes, then reduce the temperature to 350°F and continue to bake for another 18 minutes. Carefully open the oven and top with a few marshmallows. Leave in the oven for 4 more minutes. Serve piping hot. 
  4. To serve, drizzle with chocolate syrup, more marshmallows, and whipped cream, if desired. 

    A popover pan is a pan dedicated to one use: making popovers. It is similar to a standard muffin tin in that it has round cavities. The difference is that a popover pan has deeper cups, which enable a higher loft when baking. If you don’t own one, you can use a muffin tin. The popovers will still be wonderful, though they will not puff quite as high.
